Fall is here…and I’m hungry!

Today (after a quick work requirement) I’m headed to my favorite Wegman’s for some grocery shopping. It’s long overdue — we’re low on most essentials, but it didn’t stop me from having a great breakfast of fried eggs and cheese grits. However, I spent some time menu planning this week during some slow minutes at work, and am ready for a fall feast! I’m officially into the cooler weather and have been wanting some fall foods. Here’s what we’re looking at this week:

Tonight: Roast chicken and potatoes (a la How to Cook Everything by Mark Bittman) (oh, and did I mention it’s with local chicken from the Morrow farm? I’m excited to try it!), acorn squash and apple pie

This week: Chicken pie (with leftovers from tonight’s dinner), ribbolita and eggplant parmesan (it’s my plan to make 2 and freeze 1)

I’ll post on how successful my roast chicken is…it’s a recipe I use often, but somehow, can still manage to mess up. Fingers crossed!
